Add the goose breast, skin on, into a bowl of cold water. Refrigerate for 48 hours, changing the water every 10-12 hours.

Use olive oil and rub the breasts. Add cracked pepper, salt, and a hint of garlic powder to taste.

Let breasts stand until room temperature prior to cooking, and then place the goose breast on a hot grill. Cook approximately 5 minutes each side, or until at least medium rare.

Either slice or shred the goose breast, and place in an oven safe pan. Cover with your favorite BBQ sauce and bake at 350 degrees for approximately 10-15 minutes, or until the sauce is heated.

Serve as BBQ sandwiches, or sliced goose breast.
