Bacon Walleye

Place the walleye filets on a sheet of foil. Lay strips of bacon between the filets, preferably in the center of the foil. Season walleye filets with salt to taste, and add a Bay leaf if desired. Top with fresh cut onion. Adding a touch of honey will real add some extra taste. Wrap the mixture and close the foil tight. If using an oven, place on a cookie sheet and cook on low heat until the filets are cooked. If using open fire or grill, ensure the filets cook slowly. Great to serve with baked beans.
